The resulting number is called the colouring strength, and it's expressed as a value referred to as 250nm absorbance.

Saffron rated above 250 on this scale is considered super negin or premium grade, one of the highest grades available. Anything below 190 is a significantly lower quality product. This isn't just academic. It's the difference between saffron that genuinely transforms a dish and saffron that leaves you wondering why it isn't doing much at all.

One thing worth understanding: crocin is not unique to saffron. Small amounts appear in gardenia fruit and a few other botanicals. But saffron contains crocin in concentrations that simply don't exist anywhere else in the plant kingdom. That's part of why saffron is widely regarded as the world's most valuable spice by weight. How to Get the Most Crocin from Your Saffron

This is where things get practical. Understanding crocin helps you use saffron better. The key is extraction. Crocin releases most efficiently when saffron threads are bloomed first, meaning steeped in a small amount of warm liquid before being added to your dish.

Water, warm broth, or even a small amount of warm milk all work well. The liquid temperature matters: aim for warm rather than boiling. Extremely hot water can degrade some of the aromatic compounds alongside crocin, dulling both colour and flavour. Let the threads steep for at least 15 minutes, though 20 to 30 minutes produces noticeably richer results. That deeply coloured liquid you end up with is crocin-rich extract.
