- 1.5 cups short-grain rice (bomba or Arborio both work)

- 300g large shrimp, peeled and deveined
- 300g mussels or clams, scrubbed and debearded
- 150g squid rings (optional but worth it)
- 1 medium onion, finely diced
- 4 garlic cloves, minced
- 1 red bell pepper, sliced thin
- 1 can (400g) crushed tomatoes
- 3 tablespoons olive oil
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley and lemon wedges for serving
How to Make It
- Bloom the saffron first. This step matters more than people realise. Place your saffron threads in a small bowl and add about 3 tablespoons of warm (not boiling) stock. Let it sit for 10 to 15 minutes. The liquid will turn a deep amber colour and the aroma will open up beautifully. This is how professional kitchens extract the most flavour and colour from saffron before it ever hits the pan.
- Build your base. Heat the olive oil in your pan over medium heat. Add the onion and bell pepper and cook for about 6 to 7 minutes until soft. Add the garlic and cook for another minute. Paella gets its signature slightly crispy bottom layer, the socorrat, by being left undisturbed. Season with salt and pepper. Bring to a gentle simmer and cook uncovered for about 15 minutes on medium-low heat.
- Add the seafood. Nestle the shrimp, mussels, and squid into the rice. Cover loosely with foil and cook for another 8 to 10 minutes, until the shrimp are pink and the mussels have opened. Discard any mussels that remain closed.
- Rest and serve. Remove from heat and let the pan rest for 5 minutes before serving. Scatter fresh parsley over the top and serve with lemon wedges alongside.
Tips and Variations
Do not skip the blooming step. One thing we have noticed when testing this recipe is that saffron bloomed in warm liquid adds noticeably more colour and aroma than threads dropped straight into the pan. It takes 10 minutes but makes a real difference in the final dish.
Use the right rice. Short-grain rice absorbs liquid without turning mushy, which is exactly what you want. If you use long-grain rice, the texture will not be the same. Bomba rice is traditional and holds up beautifully; Arborio is a reliable Canadian pantry substitute.
