What You'll Need

  • 1 ripe banana (frozen works beautifully for a thicker texture)
  • 1 cup plain or vanilla yogurt (Greek yogurt adds extra creaminess)
  • 1 tablespoon raw honey, plus more to taste
  • A small pinch of Saffronia saffron (about 10 to 15 threads)
  • 2 tablespoons warm water (for blooming the saffron)
  • Half a cup of whole milk or your preferred milk alternative
  • A small pinch of cardamom, optional but worth it

How to Make It

  1. Bloom the saffron. Add your saffron threads to 2 tablespoons of warm water. Not boiling. Warm. Let it steep for 10 to 15 minutes. You will watch the water turn a deep amber gold. That colour and flavour is what you are after.
  2. Combine everything in a blender. Add the banana, yogurt, honey, milk, and cardamom if using. Pour in all of the bloomed saffron liquid, threads included.
  3. Blend until smooth. About 45 to 60 seconds on high should do it. If you want it colder and thicker, add a small handful of ice before blending.
  4. Taste and adjust. This is important. Saffron has a slightly bitter edge that honey balances beautifully. Add a little more honey if needed, blend briefly, and pour.
  5. Serve immediately in a chilled glass. A few saffron threads on top as a garnish is a nice touch if you are serving guests.

A Pro Tip Worth Knowing

One thing we have noticed is that people often use too little saffron the first time, then wonder why the flavour does not come through. A true pinch means at least 10 threads for one serving.
