Ingredients
- 350g (12 oz) pasta — linguine, tagliatelle, or fettuccine work beautifully
- 1 generous pinch of premium saffron threads (approximately 20 to 25 threads)
- 3 tablespoons warm water (for blooming the saffron)
- 2 tablespoons unsalted butter
- 3 cloves garlic, finely minced
- 1 small shallot, finely diced
- 1 cup (240ml) heavy cream (35%)
- ½ cup dry white wine (optional, but recommended)
- ⅓ cup freshly grated Parmigiano-Reggiano, plus more for serving
- Salt and white pepper to taste
- Fresh flat-leaf parsley or chives, for garnish
- Lemon zest, for finishing
Instructions
- Bloom the saffron first. Add your saffron threads to 3 tablespoons of warm (not boiling) water and let them steep for at least 10 minutes. The water will gradually shift to a deep amber-gold — that's the crocin releasing, which gives the sauce its signature colour and flavour. Don't skip this step.
- Cook your pasta. Bring a large pot of generously salted water to a boil and cook your pasta until just shy of al dente. Reserve about ½ cup of pasta water before draining.
- Build the base. While the pasta cooks, melt butter in a wide skillet over medium heat. Add the shallot and cook for 2 to 3 minutes until softened. Add the garlic and stir for another minute until fragrant.
- Deglaze and reduce. Pour in the white wine (if using) and let it reduce by half, about 2 minutes.
- Add the cream and saffron. Pour in the heavy cream followed by the bloomed saffron and its steeping liquid. Stir gently to combine. Reduce the heat to medium-low and let the sauce simmer for 5 to 6 minutes until it thickens slightly and turns a beautiful golden hue.
- Finish with Parmesan. Remove from heat and stir in the grated Parmigiano-Reggiano. Season with salt and white pepper.
- Toss and serve. Add your drained pasta directly into the skillet and toss well to coat. Plate immediately, finish with fresh herbs, a fine grating of lemon zest, and more Parmesan at the table.
