For the Herb Crust

  • 1/2 cup panko breadcrumbs
  • 2 tbsp finely chopped fresh rosemary
  • 2 tbsp finely chopped flat-leaf parsley
  • 1 tbsp fresh thyme leaves
  • 2 tbsp finely grated Parmesan
  • 1 tbsp olive oil
  • Pinch of flaky sea salt

How to Make It

  1. Bloom the saffron. Place your crushed saffron threads in a small bowl and add 3 tablespoons of warm (not boiling) water. Let it steep for at least 15 minutes. This gives you that vivid golden colour and maximum depth of flavour. Using lab-tested saffron here makes a real difference; low-quality saffron won't bloom properly and will leave your marinade flat.
  2. Make the marinade. Whisk together the bloomed saffron liquid, 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, kosher salt, black pepper, and cumin.
  3. Marinate the lamb. Pat your lamb chops dry with paper towel. Coat each chop thoroughly with the saffron marinade, cover, and refrigerate for at least 2 hours, or up to overnight. The longer the rest, the more the saffron's aromatic compounds penetrate the meat.
  4. Prepare the herb crust. In a small bowl, combine panko, rosemary, parsley, thyme, Parmesan, olive oil, and a pinch of flaky salt. Mix until the crumbs feel lightly moistened. Set aside.
  5. Bring lamb to room temperature. Remove the chops from the fridge 30 minutes before cooking. This ensures even cooking from edge to centre.
  6. Sear the chops. Heat a cast iron or heavy oven-safe skillet over high heat until very hot. Add the remaining tablespoon of olive oil. Sear each lamb chop for 2 minutes per side without moving them. Work in batches if needed to avoid crowding the pan.
  7. Apply the herb crust and roast. Preheat your oven to 400°F (200°C). Press a generous layer of the herb crust firmly onto the top of each chop. Transfer the skillet to the oven and roast for 6 to 8 minutes, until the crust is golden and the internal temperature reads 135°F (57°C) for medium-rare.
  8. Rest before serving. Remove the chops from the oven and let them rest for 5 full minutes before serving.
